On the last night of the year, John Hopkins and his team braved a storm of arctic proportions to craft a whiskey in time to toast the Queen's Jubilee.
Determined that their first bottle would bear the year 1897 on its label, the men battled the elements wearing coats and scarves to protect themselves from the freezing snow.
After hours of hard work and with the heroic efforts of the men at his distillery, Hopkins finally triumphed and was rewarded with the first barrel of whiskey Speyburn.

At Speyburn it takes four hours to complete a maceration cycle.
During that time, the grist is repeatedly sprayed with hot water to convert the starches into fermentable sugars.
The large mash tun efficiently produces a clear and flavorful “wort”, a sugary liquid ready for fermentation.
They use both stainless steel and wooden washbacks, the latter made of Douglas fir. They are large tanks where the must meets the yeast and fermentation takes place.
The yeast metabolizes the sugars to produce alcohol and carbon dioxide in a foaming and churning spectacle, this is the most visually spectacular part of the process.
Long fermentation times at Speyburn add character to the finished single malt whiskey.
The strong beer produced at this stage is called a 'wash' and already has much of the Speyburn character locked in.

The fragrant character of Old Pulteney whiskey is defined by its unusually shaped stills, with particularly large boiling balls creating a more fragrant whiskey character and inspiring the shape of its bottle.
Legend has it that when the still reached the still, it was too tall for the room, so the manager cut off the top.
That might just be a big story, but the truth is that the unusual shape of the stills is what gives Old Pulteney its original character.

The single malt is the product of the patience and dedication of its craftsmen, who will settle for nothing but the best for Balblair.
From the exceptionally long fermentation of 62 hours and the 4 1/2 hour distillation extremely slow, it is this measured and thoughtful approach that means they are able to take advantage of the time to create the flavor of their unique spirit.
